Sangervasio is a small, yet mighty, organic grape grower and wine maker in western Tuscany.  Founded by the Tommasini family in the 1960s, the winery takes its name from the village of San Gervasio, a quaint hilltop town 30 miles from the Tyrrhenian coast.  The property is certified organic and the team is dedicated to producing wines using a minimalist intervention approach – most significantly by relying exclusively on native grape yeasts for alcoholic fermentation.  The family also owns and operates a traditional restaurant, Al Pachino, as well as Ristoro, a small market featuring locally-produced Tuscan products.

The grapes for Grand Vin private label Chianti are sourced from various parcels of the family’s vineyards throughout the western zone of Chianti Colline Pisane.  The fruit is hand harvested in the latter half of September and immediately crushed at the winery.  The juice and skins macerate for a brief time prior to alcoholic fermentation in traditional cement vats.  On the pallet the wine is fresh and bright with red cherry fruit flavors, subtle hints of balsamic and oven-roasted tomatoes.  The finish is suggestive of leather and toffee notes, culminating in a dry and tannic, yet equally silky finish.  Enjoy this wine alongside classic Tuscan dishes such as pappa al pomodoro, ribolita, panzanella or pappardelle con ragu di cinghiale.
